HOLY WATER TEQUILA
Holy Water tequila is unique, the blue agave plant is the first intriguing part of this tequila production process, it takes 8 years to mature. The heart of the plant, a white bulb call “piña” is cut by hand, no machines in sight, then clocked using gentle methods designed to preserve the integrity of the agave juices to create this smooth tequila. Then the yeast is serenaded by classical music during fermentation. After being distilled the filtration process was extended just enough to create a livelier nicer tequila, to a concentration of around 40%. ABV (80-proof). Then our tequila is aged in white oak barrels. Finally centrifuged and filtrated again before being bottled. It embodies the beautifully rich flavor, aroma, and character of blue agave tequila, but
with an incredibly smooth finish.
Because of the very limited amount of tequila that is produced (less than 5,000 cases a year), Holy Water tequila is not always available and is put on sale when new batches are ready. OUR STORY
LEGEND HAS IT that in the 1920s there was a priest who ran an orphanage in the state of Jalisco in Mexico. His name was Padre Juan. At the time, the Mexican revolution had transformed Mexican culture and government, but it also produced many more orphans than Padre Juan could afford.
At about the same time a benefactor of the orphanage died leaving Padre Juan a few acres of a blue agave plantation. His first impulse was to sell it to raise funds to run the home for kids. As luck would have it, there were no buyers for the land. However, one of the local producers of Tequila offered to buy the harvest when it was ready. And so, Padre Juan and some local townspeople worked the land and grew the blue agave. This provided the much-needed funds to run the orphanage.
Then one night in a dream, Padre Juan dreamt that an angel told him he needed to grow the orphanage to meet the need of the local town. When he asked the angel about the money the angel gave him a bottle of the tequila his blue agave had been producing along with a simple, yet pure recipe for a distillation process. Padre Juan took this as a sign that to make more money, he should start distilling following the recipe and selling to consumers rather than the producer.
And so, Padre Juan in an unlikely manner started to produce the tequila. This made him divide his time between the church and the tequila factory, so he asked the members of the church chorus to come and practice in the tequila factory, which they did, right next to the fermentation process, it is said that those songs gave his tequila a special spirit.
It was just a few acres and that meant that production would always be limited to a small amount. But Padre Juan and his volunteers cared for the land and produced a premium tequila to raise the funds needed for the orphanage. However, the other local producers were not happy with the new competition and so they effectively blacklisted Padre Juan and prevented any of his new premium tequila to be sold.
This seemed like the end of the road for the enterprising priest and his unique method of funding his ministry. Until one day, an American visited him. The US had entered prohibition and he was looking for products to “import” to the US. The priest could legally sell him the tequila (Mexico did not have prohibition) but the man would have to do anything illegal on his own.
Unbeknownst to Padre Juan, the man would buy the tequila and would add his own labels to bring in the liquid to the US, the labels gave the tequila a new name: Holy Water.
Eventually, Padre Juan died, and the new caretakers of the orphanage sold the land. Also, prohibition ended and there was no need to import Holy Water to the US.
Almost a century later, a group of friends found a framed copy of a unique, recipe that had been discovered in an old run-down church in Jalisco. At the bottom, it was signed, simply “P. Juan.” That recipe is now used to produce a very small-batch, premium boutique tequila which is called Holy Water. And, in honor of Padre Juan, 100% of the profits from the tequila go to help non-profits that are doing local work serving needs in local communities.
